About Anise

Anise is a delicate annual in the carrot family. The crop is the small oval gray-brown seed (like fennel seed, not star-shaped). Star anise is a different plant (Illicium verum), a tropical tree. Do not confuse the two in the garden or the kitchen.

When to Plant

Direct-sow after last frost when soil is 60°F+. Anise dislikes transplanting.

How to Plant

Because seed is tiny, mix with dry sand and sow ¼ inch deep. Space 8–12 inches (2–3 ft is too wide). Keep moist until 8 inches tall, then water moderately. A nitrogen boost is optional before bloom; too much nitrogen makes leafy plants and fewer seeds.

When to Harvest

Harvest when umbels brown. Hang upside down over a paper bag until seed drops. Store cool, dry, and dark.
