About Kohlrabi

Kohlrabi is grown for the swollen stem that sits above the soil — it is not a root like a turnip, though you can cook it similarly. Leaves are edible too. Harvest small; large bulbs go woody.

When to Plant

Direct-sow or transplant 2–4 weeks before last frost, and again in late summer for fall. It is a cool-season crop.

How to Plant

Sow ½ inch deep. Thin to 4–6 inches (about 4 plants per square foot — not 1 plant per 3 square feet). Rows 12–18 inches. Even moisture prevents woodiness.

When to Harvest

Cut when the stem is 2–3 inches across, at soil level. Peel if the skin is tough. Eat raw or cooked; greens like mild kale.
