About Hyssop

Hyssop is a hardy perennial shrublet with blue flower spikes that bees love. A little goes a long way in the kitchen. Do not overwater.

When to Plant

Start indoors 6–8 weeks before last frost, or sow after frost. Zones 4–9.

How to Plant

Sow ¼ inch deep. Transplant 12 inches apart in full sun and well-drained soil. Shear after bloom to keep it woody but compact.

When to Harvest

Snip young leaves and flower tips. Dry in small bunches. Strong flavor — use sparingly with fatty meats or in tea blends.
