Brassica oleracea var. acephala

About Kale

Kale is the hardiest garden green. Flavor sweetens after frost. Plants that are crowded stay small and aphid-prone.

When to Plant

Sow indoors 4–6 weeks before last frost, or direct-sow 2–4 weeks before. Sow again in midsummer for a fall and winter crop.

How to Plant

Sow ¼–½ inch deep. Thin or transplant to 8–12 inches (not ½–12 inches). Rows 18–24 inches. Keep moist; mulch.

When to Harvest

Pick outer leaves when they are the size of your hand, leaving the crown. Plants produce for months. After hard frost, flavor improves; in Zones 7+ kale often overwinters.
