How to Grow Organic Tarragon from Cuttings (French)

About Tarragon
True French tarragon (Artemisia dracunculus) rarely sets viable seed and is grown from cuttings or divisions. Seed packets labeled tarragon are usually Russian tarragon (A. dracunculus var. inodora), which is milder, coarser, and a different kitchen plant. Buy plants for French flavor. Companion: peppers and eggplant — “throughout the entire garden” is not a plan.
When to Plant
Set French plants out after frost. Divide in spring. Zones 4–8 for French, with winter drainage.
How to Plant
Plant 18–24 inches apart in full sun and very well-drained soil. Do not overwater. A pot is safer in wet climates. Replace plants every few years when flavor fades.
When to Harvest
Snip young stems before bloom. Flavor is anise-like and delicate — use fresh; drying dulls it. Freeze in oil or make vinegar.
