About Cauliflower

Cauliflower is the fussiest heading brassica — it wants even moisture, even fertility, and a long cool spell. Heat or drought causes “buttoning” (tiny heads).

When to Plant

Start indoors 4–6 weeks before last frost for spring. For fall — often the easier crop — start 10–12 weeks before first frost. Transplant when seedlings have 4–5 true leaves.

How to Plant

Set plants 18–24 inches apart, rows 24–36 inches, slightly deeper than they grew in the pot. Water in well. When the curd is about the size of a chicken egg, blanch white types by folding wrapper leaves over the head and clipping; colored types usually need no blanching.

When to Harvest

Cut when the head is full, tight, and still smooth — before it ricers or separates. Include a few wrapper leaves. Unlike broccoli, cauliflower rarely makes a second head.
