How to Grow Organic Mustard Greens from Seed

About Mustard Greens

Mustard is a fast, peppery green for cool weather. Leaves are best young. It is not okra — do not reuse these specs for a heat-loving crop.

When to Plant

Direct-sow 2–4 weeks before last frost and again in late summer. Bolts in heat.

How to Plant

Sow ¼–½ inch deep. Thin to 6–12 inches for full plants, or grow as a cut-and-come-again patch. Rows 12–18 inches. Keep moist.

When to Harvest

Cut leaves at 3–4 inches for salads, or let them reach 6–8 inches for cooking. For a successive harvest, never strip a plant bare — leave the growing point. Flowers and green seed pods are edible.
