How to Grow Organic Artichoke from Seed

About Artichoke
Globe artichoke is a dramatic perennial thistle grown for its edible flower buds. In USDA Zones 7–10 it overwinters in the ground; in Zones 3–6 treat it as a tender perennial — mulch heavily, or grow Green Globe types in a large pot and bring it under cover. The plant reaches 3–5 ft and needs a long, mild season.
When to Plant
Start seed indoors 8–12 weeks before your last frost. Transplant after nights stay above 50°F. In Zones 8–10 you can also set plants in fall for a spring harvest.
How to Plant
Sow ¼–½ inch deep in pots; keep at 70–80°F until sprouted (10–21 days). Harden off, then plant 3–4 ft apart in full sun and rich, well-drained soil (pH 6.5–7.5). Water deeply. Do not plant artichokes where drainage is poor.
When to Harvest
Harvest while buds are still tight and compact — before the bracts start to open. A bud that has begun to flower is fibrous and past prime. Cut the stem 1–2 inches below the bud. After the main head, smaller side buds follow. In cold climates, cut plants back after frost and mulch the crown 6–12 inches deep.
