Parsnips are a long-season root. Fresh seed matters — last year’s seed germinates poorly. Flavor sweetens after frost as starches convert to sugar.

When to Plant

Direct-sow 2–4 weeks before last frost, timed so roots mature around your first fall frost (often 100–120 days).

How to Plant

Sow ½ inch deep, 1 inch apart; thin to 3–4 inches. Rows 18–24 inches (not 6 inches). Keep the bed moist until germination, which can take 2–3 weeks. Mark the row with radish.

When to Harvest

Wait until after frost if you can. Dig with a fork — roots go deep. They can stand in the ground under mulch and be harvested through winter in Zones 5–8.
