About Brussels Sprouts

Named for Brussels, Belgium. A long-season cool crop — sprouts sweeten after frost. Give them the whole season in a bed you will not need until late fall.

When to Plant

Start indoors 4–6 weeks before last frost, or sow in early summer for a fall harvest timed to mature around first frost. Count back 90–100 days from your first fall frost.

How to Plant

Transplant 18–24 inches apart, rows 30–36 inches. Stake in windy sites. Remove yellow lower leaves as sprouts form from the bottom up. Optional: pinch the top 4 weeks before harvest to size up remaining sprouts.

When to Harvest

Twist off sprouts when they are 1–1½ inches, firm, and still closed, starting at the base. You can also cut the whole stalk. Flavor improves after light frost.
