About Summer Savory

Summer savory is a tender annual, the traditional bean herb. You may feel it is milder than winter savory (Satureja montana), which is a perennial — this page is summer savory only.

When to Plant

Direct-sow after last frost, or start indoors 4 weeks earlier.

How to Plant

Sow ¼ inch deep. Thin to 6–8 inches. Full sun, average well-drained soil. Pinch tips.

When to Harvest

Cut leafy stems as plants bush out. Do not over-harvest summer savory — leave a third of the plant. Dry or freeze. Use with beans, eggs, and stuffing.
