About Parsley

Parsley is a biennial grown as an annual for leaves. Flat-leaf (Italian) has more flavor; curly is the garnish. Soak seed overnight. It wants rich, moist, well-drained soil — not waterlogged, and it does not “tolerate poor drainage.”

When to Plant

Start indoors 6–8 weeks before last frost, or direct-sow 2–4 weeks before. Germination is slow.

How to Plant

Sow ¼ inch deep. Germination 14–28 days. Transplant 8–10 inches apart. Keep evenly moist. Full sun to part shade.

When to Harvest

Cut outer stems at the base. In year 2 it flowers and leaf quality drops; sow new plants each spring. Freeze chopped in oil.
