About Caraway

Caraway is a biennial. Year 1 is a low parsley-like rosette; year 2 it bolts, flowers, and sets the seed that is the main crop. It is not borage — ignore any spec box copied from a 5-day, 70°F tomato companion.

When to Plant

Sow in spring or late summer in cool soil. Fall sowings overwinter as a rosette in Zones 4–8.

How to Plant

Sow ¼ inch deep, 8–12 inches apart. Germination 10–21 days at 60–70°F. Full sun, well-drained soil. Companions: peas and beans. Keep weeded the first year.

When to Harvest

Year 1: a few leaves, sparingly. Year 2: harvest brown seed heads before they shatter; finish drying in a paper bag. That seed is the crop.
